Tomato Relish

Feature veggie tomato

INGREDIENTS :

  1. 5 kg Ripe Tomatoes
  2. 500gm Onions
  3. 2 tbls salt
  4. 2 cups Brown malt vinegar
  5. 1kg Sugar or less 750-800gm
  6. 1 tbls Corn Flour
  7. 1 tbls Curry Powder
  8. ½ tbls mustard 

METHOD:

Cut up tomatoes and onions, sprinkle salt and soak overnight. Next morning bring to the boil cook for 15 minutes, add vinegar and sugar.
Cook for 45 minutes. Mix together remaining ingredients. Add paste cook another 10-15 minutes.
